Yogurt Marinated Lamb Shank

Ingredients
- 4 lamb shanks
- 1 c yogurt
- 1 tbs powdered mustard
- 8 sprigs fresh mint
- 1 yellow onion chopped
- 4 tbs olive oil
- 2 c vegetable broth
- Salt and Pepper
The night before
- Season the lamb leg with salt and pepper.
- Put in a airtight bag or container with yogurt, 2 tbs olive oil and powdered mustard.
- Refrigerate overnight
In a skillet or oven safe pan
- Preheat the oven to 180 degrees Celsius
- Heat 2 tablespoons of olive oil
- Sear the marinated lamb leg on high heat until the outside is just golden brown. (About 2-4 minutes on each side).
- Take it off the heat.
- Add all the onions then pour 1.5 cups of the broth over the whole mixture.
- Put half the sprigs of mint over the lamb legs
- Cover with foil and roast for 1.5 hours
- Uncover the pan and add the remaining broth.
- Roast for 30-45 minutes more.
- Remove from oven and let cool slightly before serving.
