  1. 4 lamb shanks
  2. 1 c yogurt
  3. 1 tbs powdered mustard
  4. 8 sprigs fresh mint
  5. 1 yellow onion chopped
  6. 4 tbs olive oil
  7. 2 c vegetable broth
  8. Salt and Pepper
The night before
  1. Season the lamb leg with salt and pepper.
  2. Put in a airtight bag or container with yogurt, 2 tbs olive oil and powdered mustard.
  3. Refrigerate overnight
In a skillet or oven safe pan
  1. Preheat the oven to 180 degrees Celsius
  2. Heat 2 tablespoons of olive oil
  3. Sear the marinated lamb leg on high heat until the outside is just golden brown. (About 2-4 minutes on each side).
  4. Take it off the heat.
  5. Add all the onions then pour 1.5 cups of the broth over the whole mixture.
  6. Put half the sprigs of mint over the lamb legs
  7. Cover with foil and roast for 1.5 hours
  8. Uncover the pan and add the remaining broth.
  9. Roast for 30-45 minutes more.
  10. Remove from oven and let cool slightly before serving.
