Yogurt Quinoa Casserole

Ingredients
  1. 1 cup quinoa
  2. 1 yellow onion
  3. 4 cloves garlic, minced
  4. 1 head of broccoli, chopped
  5. 3 large carrots
  6. 5 c spinach leaves
  7. 1 tbs unsalted butter
  8. 2 tbs cornstarch or ground arrowroot
  9. 1 c whole milk
  10. 1 1/2 cup of cheddar, mozzarella or any other kind of cream based cheese.
  11. 4 pieces of de-boned chicken breast marinated overnight in ranch or your favorite marinate*
Quinoa
  1. Cook quinoa according to package instructions, set aside in a large bowl.
Vegetables
  1. Heat a cast iron skillet (or a regular pan if you don't have one) for 2 minutes on high heat.
  2. Heat 2 tbs olive oil on medium heat for 1 minute.
  3. Cook onions and garlic until onions are translucent
  4. Add broccoli and carrots, cook until just tender then add them to the bowl with the quinoa.
  5. Season with salt and pepper to taste.
Chicken (Optional)
  1. In the same pan or skillet heat 2 tbs olive oil on medium heat.
  2. Cook the chicken completely.
  3. Season with salt and pepper to taste.
  4. Add to the bowl with quinoa and vegetables.
  5. The Casserole
  6. Melt butter in the skillet on medium heat
  7. Mix the cold milk with the cornstarch in a cup or bowl
  8. Pour the milk and cornstarch mix into the hot pan whisking quickly and continuously until it is thick.
  9. Stir in the quinoa mixture and yogurt.
  10. Add 1 cup of cheese.
  11. If your pan is not oven safe transfer it to a casserole dish now.
  12. Sprinkle one even layer of bread crumbs on top of the dish.
  13. Bake for 8 minutes at 200 degrees Celsius
  14. Pull out the dish and sprinkle remaining cheese (half a cup)
  15. Bake for 4 more minutes at 200 degrees Celsius
Notes
  1. Chicken is optional for this dish but it gives a great flavor. You can marinate it in yogurt instead of ranch for a lighter version.
  2. Substitute Kale for broccoli, leave out the carrots or add mushrooms. I like to use this recipe to create all kinds of vegetable casseroles. It's especially great when I need to quickly make something before it goes bad.
